Who can resist the classic flavor of chocolate oatmeal no-bake (no peanut butter) cookies? Not me. Perfectly cooked syrup blends with oatmeal to create a texture reminiscent of a chocolate delight!

Ingredients :
▢ 2 c sugar
▢ ½ c butter (1 stick – salted)
▢ ½ c milk
▢ 4 tablespoons cocoa
▢ 2 teaspoons vanilla extract
▢ 3 c oatmeal (use instant oatmeal, not old fashioned or steel cut oatmeal)
Instructions :
Combine butter, sugar and milk in a saucepan and bring to a boil over medium to high heat (just enough to bring the syrup to a rapid boil). Stir often to make sure it doesn’t burn or boil over!
When the syrup comes to a boil, stir and simmer for 1 minute, then remove from heat.
Add the vanilla and cocoa and stir until the syrup is smooth. Add the oat flakes and stir until the syrup is evenly coated.
Place tablespoon-sized portions on wax paper, using the back of a spoon to make a cookie shape (rather than a mound of no cookies, if desired). Allow to infuse for one hour.
