Cherry Pie Bars .
Cherry pie bars are a delicious fruity dessert that is perfect for a crowd at any party! The sweet vanilla frosting requires only 3 ingredients and is perfect for coating a golden buttery crust with cherry pie filling. Ingredients :
Cherry Pie Bars.
▢ ¾ cup butter (softened – 12 tablespoons or 1½ packets of butter)
▢ 1½ cups sugar
▢ ½ teaspoon salt
▢ 3 wide eggs (at room temperature)
▢ 1½ teaspoons vanilla extract
▢ 2¼ cups general purpose flour
▢ 21 oz cherry pie filling (1 can for 21 oz or see my recipe)
Vanilla glaze.
▢ ½ cup confectioners’ sugar
▢ 1 tablespoon heavy cream (or whole milk, or half and half)
▢ ½ teaspoon vanilla extract
Instructions :
Preheat oven to 350°F (175°C) and lightly grease a 9×13 baking dish using nonstick baking spray, baking spray or butter.
Add butter, sugar and salt to mixer bowl and whisk ingredients together.
Pour the vanilla extract into the mixer bowl. Then add the eggs one at a time, mixing each one . If you notice the mixture starting to curdle, add a tablespoon or two of all-purpose flour.
Gently incorporate the all-purpose flour until the batter is mixed. (try not to mix it up). Set aside 1 cup of the dough for later and set it aside.
Spread the dough in an even layer across the bottom of the prepared baking dish. Then cover it with the pie filling. Take the reserved 1 cup of dough and spoon it with slides on top of the cherry pie filling layer.
Bake at 350°F (175°C) until it is golden brown and the topping is no longer soft, about 30-35 minutes. Then transfer the mold to a cooling rack to cool completely before pouring the vanilla glaze over the top.
Mix powdered sugar, heavy cream and vanilla in a small bowl. Add more cream or sugar, if necessary, until you have a consistency suitable for sprinkling.
After the bars have cooled completely, sprinkle them with the vanilla frosting. You can cut and serve immediately or let the frosting harden before serving.
