Easy Chocolate Truffles .

Easy Chocolate Truffles are rich, delicate and incredibly creamy. This dark chocolate truffle recipe is vegan and gluten-free, but you won’t believe it. They simply melt on the tongue and have an incredible melting texture. Plus, these truffles are high in protein and low in sugar, making them a great after dinner treat!

  • PREP TIME: 10 minutes
  • COOK TIME: 30 minutes
  • YIELDS: 18 servings

Ingredients :

  • 1 13.5oz can of chickpeas, drained and rinsed.
  • 1/2 cup nut or seed butter (I like almond or cashew butter)
  • 1 cup vegan dark chocolate chips, melted

For coating :

  • 1 cup vegan dark chocolate chips, melted

Optional toppings :

  • Cacao nibs
  • Goji berries
  • sprinkles
  • coconut
  • nuts/seeds

INSTRUCTIONS :

First, drain the water and rinse a can of chickpeas. Then, put the chickpeas in a food processor (or blender) with the nut butter of your choice. In the past, I have used almond butter and cashew butter. I liked both, but the cashew butter became my favorite by far.

Blend the chickpeas and cashew butter for 1 minute.

Meanwhile, melt the dark chocolate either in the oven or in the microwave. You may need to add 1 teaspoon of coconut oil to make the chocolate smooth and creamy.

Note: If you are melting the chocolate in the microwave, melt it in 30 second intervals, stirring occasionally.

Once the chocolate has melted, place it in the food processor with the other two ingredients and process for 1-2 minutes or until the ingredients are combined and the batter is thick. You may have to stop several times to scrape the dough from the sides.

Then use a cookie cutter. Scoop out the dough and place it on a parchment-lined baking sheet. Place the balls in the freezer for about 15 minutes to harden. Remove from the freezer and roll the dough into smooth balls. Place them in the freezer for 10 minutes to harden again.

Meanwhile, melt additional dark chocolate for dipping. Remove the truffles from the freezer and coat them well with chocolate. Then place them back on a baking sheet lined with parchment paper and return to the freezer to harden completely.

You can top them with the filling of your choice before putting them back in the freezer to harden permanently.

That’s it. Remove from the freezer and store in the refrigerator. Will keep for 4-5 days in the refrigerator and 3 weeks in the freezer.
