Easter cake with chocolate buttercream

Surprise! The Easter Bunny has hidden candies. Although he does seem to be giving away where he left them. A guaranteed hit at your Easter party.

Ingredients :

For the cookie :
5 eggs
330 g Aveve mix for sponge cake
grated zest of 2.5 oranges
35 + 40 ml orange juice
2 springforms ⌀ 18 cm
ScrapCooking yellow coloring
For the white chocolate buttercream :
300 g soft butter
120 g Cake ‘n Party mix for crème au beurre
120 g sugar
300 ml water
150 g Callebaut white chocolate melting
ScrapCooking green food coloring

Instructions :

Bake the cookies
Preheat the oven to 180 °C. Combine the eggs, mix, orange zest and 35 ml orange juice. Beat for 10 minutes on high speed until you have a fluffy batter. At the end, add 2 to 3 knife points of yellow food coloring. Fold the remaining orange juice into the batter. Grease the springforms and divide the batter between both. Bake the cookies for 30 to 35 minutes at 180 °C. Leave them to cool on a wire rack.

Make the white chocolate buttercream
Make the crème au beurre as explained on the package. Melt the white chocolate and allow to cool slightly. Add the chocolate to the cream and mix well. Add 2 to 3 knife points of green food coloring.

Assemble the cake
Cut both cookies horizontally. Cut out a hole in the center of two of the four halves with a round cutter. Put a little buttercream on the pad and place a non-hollowed out cookie half on top. Brush this with buttercream. Place a hollowed out cookie half on top. Brush with buttercream and place the second hollowed half on top. Fill the hole with mini confetti. Brush buttercream again and place the last cookie half on top.

Decorate the cake
Scoop the remaining buttercream into a piping bag with a serrated nozzle. Pipe vertical lines from bottom to top against the outside of the cake. Cover the top completely with tufts.

Finish with sugarpaste and eggs.
Model the back, tail and legs of a bunny from white sugarpaste. Shape the soles of the feet from pink sugarpaste. Glue all parts together with a little water. Place the figure in the center of the cake. Finish with colorful sugar sprinkles and chocolate eggs.
