Cranberry Orange Cookies .
Cranberry and orange biscuits – Cranberries and orange come together in these soft and crispy Christmas biscuits.
Every year at Christmas I try out a few new biscuit recipes. Most of them are delicious, but only a few make it onto my permanent list of recipes, including favorites like Red Velvet Truffles and Homemade healthy peanut butter chocolate eggs . These cranberry-orange biscuits are a must-try recipe.

Ingredients :
For the cookies:
3/4 cup butter, softened
1/2 cup white sugar
1 cup packed brown sugar
1 egg
1 teaspoon vanilla
1 tablespoon grated orange zest
2 tablespoons orange juice
2 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
1 cup dried cranberries
1/2 cup chopped pecans (optional)
For the glaze:
1 teaspoon grated orange zest
3 tablespoons orange juice
1 1/2 cups confectioners’ sugar
Instructions :
Preheat the oven to 350 degrees.
Mix the butter and sugar with an electric mixer until creamy. Add the egg and vanilla and mix well.
Add 1 tablespoon of orange zest and 2 tablespoons of orange juice.
In a medium-sized bowl, combine the flour, baking powder, baking soda and salt and stir into the creamy mixture. Add the cranberries and nuts (if present).
Pour the batter in rounded spoonfuls onto an ungreased biscuit sheet.
Bake for 8-10 minutes until the edges are golden brown. Remove the biscuits from the biscuit sheet and allow them to cool on a wire rack.
Mix the ingredients for the icing in a small bowl until smooth. Pour over the cooled biscuits. Allow to stand until the icing has set.
