Amazing Avocado Tacos .

Ingredients:

10 slices of thinly sliced bacon
2 cups of cooked chicken, shredded into fibers.
1 stalk of celery, finely chop
1 tomato, finely chop
1/4 cup red onion, finely chopped
1/4 can of canned corn
1 cup chopped leaf lettuce
1 tbsp mustard
3 tablespoons mayonnaise
3 tablespoons sour cream
salt/pepper
4 avocados
cherry tomatoes for decoration

Preparation:

Preheat the oven to 180°C.
On a dry baking tray place the bacon slices and put them in the
preheated oven for 10 minutes until browned and crispy. You want them crispy in the salad first and foremost.
Slice the cooked bacon very finely. The pieces should be no more than
5×5 mm.

In a deep bowl, mix all the ingredients for the salad: chicken meat,
celery, tomato, onion, corn, leaf lettuce and prepared bacon,
leaving a couple of spoonfuls for decoration. Salt/pepper to your liking,
Add mustard, mayonnaise and sour cream and mix well so that all
ingredients are coated with the dressing.

Avocado well wash, dry on a table towel and cut it in half, remove the bone and fill the boats with the salad from the meat of the chicken salad.

Finish the avocado halves with the lettuce and garnish with shredded crispy
bacon and halves of cherry tomatoes.
