Delicious cookies

Salted Brownie Cookies .

Warm and Chewy Salted Brownie Cookies are just like thick and fudgy brownies, in cookie form! They are dangerously delicious!  I like to make a batch of this dough, then bake half and freeze the rest to make it even faster later!

INGREDIENTS :

  • Servings: 11 large cookies

6 oz 160 grams dark chocolate ( 60-70 % cocoa), chopped
1/3 cup 80 grams unsalted butter
1/2 cup 100 grams brown sugar
1/3 cup 67 grams granulated sugar
2 large eggs, at room temperature
1 1/2 cups all-purpose flour
1/4 cup cocoa powder
1 teaspoon baking powder
1/2 teaspoon salt
Flaky sea salt, for sprinkling

INSTRUCTIONS :

Preheat the oven to 180 degrees. Line two baking sheets with parchment paper.

In a medium bowl, mix together the flour, cocoa powder, salt and baking powder. Set aside.

In a heatproof bowl, melt the chocolate and butter in a small pot of boiling water. As soon as chocolate is melted, remove from heat.

Using an electric mixer fitted with a whisk attachment, beat sugar and eggs on medium to high speed for 6 to 7 minutes, until tripled in volume.

Gently fold chocolate mixture into egg mixture until well blended.

Add the flour mixture with a spatula until the mixture is smooth and there are no lumps of flour. The dough will be very sticky.

Use a large (3 tablespoons) cookie scoop to spread the dough onto the lined baking sheets. Spread them out at least an inch apart, as they will spread out during baking.

Bake the cookies for 10 minutes.

Let the cookies cool for 5 minutes on the baking sheets, then place them on a wire rack and let them cool completely. Sprinkle with salt flakes.
