These Oreo cheesecake cookies are very moist and tasty. They are easy to make and are filled with cream cheese, instant cheese pudding and Oreos! Perfectly soft and crunchy, they are sure to become your new favourite cookies ! They are so easy to prepare that you can make a whole batch for Christmas, a movie night, a school lunch or a light dessert.

▢ 4 ounces cream cheese softened
▢ 1/2 cup (1 stick) butter softened
▢ 1 teaspoon vanilla extract optional
▢ 3/4 cup granulated sugar
▢ 1 cup all-purpose flour
▢ 10 Oreo cookies chopped
In a large bowl, beat the cream cheese, butter, sugar and vanilla extract with an electric mixer until well blended.
Add the flour and continue mixing until fully combined. Add the crumbled Oreos and mix gently. Cover the dough with cling film and place in the refrigerator for 30 minutes, until firm.
Preheat the oven to 350°F. Form small balls with the biscuit dough and place them on a sheet of baking paper.
Squash the dough balls to flatten them a little (the biscuits will not flatten too much on their own). Bake for 12-15 minutes, until the bottom is golden brown. Allow the biscuits to cool on a wire rack for at least 5 minutes.
