Monster Oatmeal Cookie Bars .
Monster Biscuit Bars are thick, chewy and filled with peanut butter, rolled oats, M&Ms and chocolate chips. They taste like a soft peanut butter cookie and are ready in 30 minutes: an easy dessert for any occasion.

7 tablespoon unsalted butter room temperature
¼ cup creamy peanut butter
¼ cup light brown sugar packed
¼ cup dark brown sugar packed
¼ cup granulated sugar
1 large egg room temperature
1 large egg yolk room temperature
1 tablespoon vanilla extract
1 cup all-purpose flour
¾ cup + ⅛ cup rolled oats
½ teaspoon baking soda
½ teaspoon salt
⅓ cup mini m&ms
½ cup semi-sweet chocolate chips
Line a square baking pan (8×8) with baking paper so that it hangs on all four sides. Then preheat the oven to 180 degrees.
In a bowl, beat the butter, peanut butter, brown sugar and powdered sugar until the mixture is light and fluffy.
Add the egg, egg yolk and vanilla.
Mix in the flour, oats, baking powder, salt, chocolate chips and mini M&Ms.
Place in the prepared square pan (8×8).
Sprinkle more chocolate chips and M&Ms on top, if desired.
Bake at 350° for 22-23 minutes, or until the top is golden brown and a toothpick inserted in the center is moist.
Cool completely on a wire rack before slicing, and enjoy!
