STRAWBERRY CUPCAKES .

Summer is sunshine, rest and time for the fragrant strawberries, which make very tasty desserts like this one. What makes it unusual is that the strawberries here are not only the decoration of the cake. They are also in the cream and in the dough. Such a dessert would make a beautiful addition to a tea party and pleasantly surprise guests.

You will need :
For the strawberry muffins:
1 2/3 tbsp. flour
¾ tsp. baking powder or baking powder
¼ tsp. baking soda
¼ tsp. salt
½ tbsp unsalted softened butter
¾ tbsp + 2 tbsp sugar.
1 large egg
2 egg whites
1/3 tbsp mashed fresh strawberries
¼ tbsp buttermilk
½ tsp. vanilla extract or vanillin on the tip of a knife
5 drops red food coloring (optional)
¾ tbsp. chopped fresh strawberries
12 paper muffin tins
12 small strawberries for decoration
For strawberry cream:
½ tbsp. + 2 tbsp. strawberry puree
½ tbsp softened butter
¼ tbsp. melted butter
2 ½ tbsp powdered sugar
¼ tsp. vanilla extract or vanillin on the tip of a knife
4 drops red food coloring (optional)

Instructions :

Turn oven to preheat to 350 degrees. In the first bowl, sift the flour, add the baking powder, baking soda, and salt. Whisk with a mixer.

In the second bowl, beat the softened butter with the mixer and sugar until pale and fluffy. Add 1 egg; continue beating. Add 1 egg white at a time.

In a third bowl, whisk together buttermilk, 1/3 tbsp. strawberry puree and vanilla extract.

Mix contents in second and third bowl, gradually adding flour mixture from first bowl. Sprinkle in the diced strawberries and stir with a spoon.

Fill paper molds ¾ full with batter. Bake in a preheated oven for 20-23 minutes, checking that the muffins are done with a toothpick. Remove the finished cupcakes from the oven and allow to cool.

Now prepare the strawberry cream. ½ tbsp +2 tbsp strawberry puree in a small saucepan over medium heat for 12-14 minutes, stirring occasionally. Allow the strawberry puree to boil and reduce in volume. The hot strawberry puree should cool.

With a mixer, beat the salted and unsalted butter until white. Add 1 tbsp. powdered sugar, strawberry puree, vanilla extract, and optional red dye. Whisk. Add remaining powdered sugar and continue beating until mixture is fluffy.

Spread some sliced fresh strawberries on each finished muffin.

Fill a pastry bag with strawberry cream and spread on top of the strawberry cupcake. Decorate each brownie with a whole strawberry.
Helpful Tip
If you don’t have buttermilk, you can substitute it. Take a glass, add 1 tsp of lemon juice or white vinegar, pour milk to ¼ cup. Stir and let stand for 3 minutes.
