Amazing Prague Cake .

Cake Prague was created in the image and likeness of the Austrian cake Zacher in Soviet times. But it’s easier to make.

For the sponge cake:
sugar – 1 cup
10-15% cream – 200 gr
For the sponge cake:
vodka – 0,5 cup
flour – 2 cup
cocoa powder – 4 tbsp.
baking powder – 1 tsp.
condensed milk with sugar – 100 g
egg – 2 pcs.
For frosting:
chocolate – 200 gr
For the cream:
butter – 150 gr
cocoa powder – 2 tsp.
condensed milk with sugar – 100 g

Step 1
Separate egg whites from the yolks. Whisk egg whites (2 minutes). Add sugar, condensed milk and sour cream and whisk for 3 more minutes. Separately beat egg yolks until white. Sift flour together with baking powder and cocoa into a large bowl. Very gently combine the egg whites with the beaten egg yolks and flour. Stir gently from bottom to top.
Step 2.
Preheat the oven to 200°C. Grease a 25 cm diameter baking dish with butter. Pour the batter into the mould, place in the oven and bake for 1 hour. * If you are using a single-piece mould, brush the bottom and walls with oil and sprinkle them lightly with semolina. This will make it easier to remove the finished biscuit.
Step 3
While the biscuit is baking, prepare the cream. Beat melted butter and cocoa with a mixer until smooth (1 minute). Pour in the condensed milk and whisk for 2 more minutes. * If the cream is not sweet enough, add powdered sugar or sugar syrup to taste.
Step 4.
Remove the finished biscuit from the oven. Place the mold on a damp towel, cover with a dry towel on top. Allow to cool. Take the cooled biscuit out of the mold and cut it into 3 equal-thickness cakes.

Step 5.
Spread the cream on top of two layers of the cake. Then stack them on top of each other and cover with the third cake. Do not grease the top layer.
Step 6
Break the chocolate into small pieces, put it into a fireproof bowl and put it in a pan with boiling water. When the chocolate is melted, spread it on the surface and sides of the cake. Place the cake in the refrigerator for at least 3 hours. Put the container with the rest of the melted chocolate also in the refrigerator. When the chocolate has solidified, scrape it off with a small knife. Decorate the cake with chocolate shavings.
