Most of the people love this spicy pastry with totally different fillings. Vegetarians love spicy potato ones, onion turnover, matar turnover. Non-vegetarians love minced meat or keema .Onion or patti turnover is standard in south whereas nutty sweet samosas ar standard in Mathura & Vrindavan.
For turnover pastry
2 cup general flour
⅔ cup water some additional tablespoons if needed
¼ cup oil for turnover dough
1 tablespoon oil for brushing
1 teaspoon caraway/ajwain seeds
salt to style
1 tablespoon oil
1 teaspoon cumin seeds jeera
1 teaspoon ginger and chili paste
2 cup cooked veggies potato and inexperienced peas
½ teaspoon garam masala
¼ teaspoon dry mango powder nonmandatory
salt and pepper to style
or Kadai language for ancient cooking
Stand mixer for kneading (optional)
For stuffing :
Heat oil in pan,add ginger/chillies
Add the cooked veggies.
Sauté for five minutes, add spices, salt and pepper
For turnover pastry :
Mix the flour with salt,caraway seeds(ajwain),oil & rice flour.
Knead the dough with chilled water to urge a semi arduous dough.
Add further flour as required to stay from protrusive to hands and board
Place the dough during a well-oiled vessel and canopy with a cloth/plastic wrap for quarter-hour.
Take little|alittle|atiny low} portion of it and roll the dough into small shape.
Cut it in two equal halves, create a cone by protrusive the sides with water
Fill the stuffing and shut the cone with water.Seal the sides with a fork
Line up the turnover during a baking receptacle.
For kitchen appliance baked turnover :
Bake the turnover during a pre-heated kitchen appliance at one hundred eighty C (or 360 F) for fifteen minutes(fan-forced)
Brush/Spray with oil and bake any for 15-20 minutes or till golden brown in color.
Allow to chill on rack. Serve warm.
For airfryer turnover :
Air fry the turnover during a pre-heated air chicken at one hundred eighty C (or 360 F) for 20-25 minutes
Brush oil on the turnover each 5-6 minutes.
Allow the soft-bo turnover to rest for couple of minutes on a paper room towel or a wire rack.
For Deep chicken
If you wish to cook them by deep cooking them, then heat oil during a Kadai language at low heat. Once its hot enough, cook the turnover therein oil
If the oil is on medium/high heat, you’ll not get the perfec crisp outcome
