The starchy potatoes provide a lot of energy and are therefore the perfect side dish. The breadcrumbs make the fried potato wedges nice and crispy and uniquely delicious.
for 4 servings
1 kgfloury boiling potatoes
1 lvegetable frying oil
60 gwholemeal breadcrumbs
1 teaspoon paprika powder, sweet
Wash the potatoes thoroughly, brush them off and then cut them into wedges.
Preheat frying fat to 120 °C and pre-cook potatoes in batches for about 4 minutes. Drain and let cool completely.
Whisk the egg whites. Mix the crumbs with the paprika powder, salt and pepper. Toss the potatoes in the egg whites and roll in the crumbs.
Just before serving, heat the deep-frying fat to 180 °C and deep-fry the potato wedges in it for 3-4 minutes until golden brown. Drain and serve.
