Air Fryer Zucchini Fritters .
There are many recipes for zucchini dishes and each of them deserves special attention, because zucchini is a very interesting product. It is canned, used as an ingredient in soups, stews, and it is also used to make various snacks, pancakes and even added to sweet baked goods.
Ingredients:
2 zucchini (medium)
1 onion
2 eggs
2 tablespoons sour cream
1 cup flour
fresh herbs (onion, dill, parsley)
0.3 tablespoon salt
0.3 teaspoon ground pepper
sunflower oil for frying
How to cook zucchini fritters :
Wash zucchini, wipe them dry and grate them. Squeeze out the juice, we do not need it, and we will use the grated mass as a base for the dough.
Add to the zucchini very finely chopped onion (I chopped it on a fine grater) and greenery. Anything you like – dill, parsley, green onions, spinach and so on – will do. You should get about half a cup of chopped greens.
Next come two eggs and sour cream.
And flour, of course. Without it, we can not get the right consistency for the dough on zucchini pancakes. Salt and pepper the batter.
Thoroughly knead the zucchini pancake batter with a spoon or fork, the salt should be evenly distributed throughout the mass.
We heat a frying pan for 1 minute (so that zucchini fritters won’t stick to its surface), then add a little sunflower oil to the pan (literally 2-3 tablespoons). Using a spoon, place portions of batter on the pan and fry zucchini fritters for 2 minutes on each side over medium (closer to low heat).
