The Very BEST Thumbprint Cookies .

STEP 5 : Coat with sugar. Roll the dough balls in ½ cup of granulated sugar until they are completely coated, then place them on a baking tray lined with parchment paper. Use your thumb (or a round teaspoon) to gently press down on an indentation in the center of the balls. Repeat until all the dough is used.

STEP 6 : Chill. Place the baking tray in the freezer and allow the cookie dough to chill for 30 minutes.
FILL & BAKE

STEP 7 : Heat the jam. After cooling, heat your oven to 375°F (190°C) and place ⅓ cup of jam, jelly or preserves in a small microwave-safe bowl. Heat the jam for 5-10 seconds or until you can stir gently, but not hot.

STEP 8 : Fill cookies . Use a spoon to scoop the jam into each of the indentations of the thumbprint and fill the indentation all the way to the top. Arrange the cookies so that they have 2 inches of space between them on the baking tray lined with parchment paper(S).

STEP 9 : Bake at 375°F (190°C) for 10-11 minutes or until the edges are just beginning to turn golden.

STEP 10 : Cool. Remove the cookies from the oven and allow them to cool completely.

Store your cookies at room temperature in a sealed container for 4-5 days.

Thumbprint cookies can be frozen for up to 3 months. When ready to serve, thaw to room temperature before serving.

To freeze the unbaked dough, roll the cookie dough balls and place them in the freezer until firm. Then you can transfer them to another container or bag and freeze for up to 3 months. Leave to defrost overnight, then roll in sugar, fill with jam and bake as directed.


Why did my thumbprint cookies spread?
If your cookies spread, chances are your butter was too warm. That's why it's so important to chill the dough after rolling the balls. Cold butter takes longer to heat up in the oven and therefore melts more slowly.
Can I make Thumbprint cookies in advance?
Yes, you can prepare the dough and keep it in the fridge for up to 24 hours before filling and baking! In addition, you can fully prepare and bake the cookies and freeze them for up to 3 months!
