HAYSTACK COOKIES WITHOUT BAKING
No-bake haystack cookies
Haystack Bake No Bake Cookies are a delicious old fashioned no-bake cookie made with peanut butter, peanuts, butterscotch, and salted chow mein noodles! These retro style cookies are super easy to make and are quite crunchy!
Cooking 5 minutes.
Cooking 15 minutes.
Assign time 2 hours.
Total time 2 hours and 20 minutes
Ingredients :
1 cup butterscotch chips (or 6 ounces)
½ cup creamy peanut butter
½ cup roasted peanuts (salted)
2 cups chow mein noodles (1 5 oz. canister)
Instructions :
In a medium microwaveable bowl, melt toffee and peanut butter over high heat for 1 minute. Stir the mixture. Then continue cooking in the microwave in 30-second increments, stirring each time, until the mixture is smooth and creamy.
Take the bowl out of the microwave and add the roasted peanuts and dry chow mein noodles to the mixture until they are well coated.
Spoon a tablespoon of the mixture onto a baking tray lined with parchment paper. (Using your hands to form mounds of it, if necessary).
Set the stacks aside and let them cool and set. * Setting can take up to 2-3 hours, you can put them in the refrigerator to speed up the process.
Notes :
Slowly melt the butterscotch and peanut butter, it can burn if left unattended.
Parchment paper, wax paper, and aluminum foil are good for stacking cookies.
You can spray a spoon with nonstick spray before you toss the haystack mixture to prevent it from sticking.
If you don’t want to get your hands dirty, use two spoons to gather them in piles.
