Rolo Oatmeal Cookies .

Ingredients :
1/2 C salted butter at room temperature
1/2 C white sugar
1/2 C brown sugar
1 large egg
1 & 1/2 tsp vanilla extract
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
3/4 C all purpose flour *spooned and levelled
1 & 1/2 C rolled oats
3/4 C mini rolos or regular rolos cut in half and 24 mini rolos to top cookies
Instructions :
First, preheat the oven to 350 degrees and line the baking sheets with parchment paper.
In a large bowl, whisk the butter and sugar until light and fluffy, which will take a few minutes.
Add the egg and vanilla extract and continue to beat.
In another bowl, whisk together the flour, baking soda, baking powder and salt. Add to the wet mixture and stir to combine.
Add the rolled oats.
Add the egg whites.
Shape the dough into 1 1/2 tablespoon balls and place on a baking sheet lined with parchment paper, 5 inches apart.
Bake the cookies for 10 minutes or until golden brown. The cookies will not look fully baked. Let the cookies cool completely on the baking sheet, the residual heat will continue to bake the cookies.
While the cookies are still warm, place a halved roulade on top.
