This Pumpkin Pie Oatmeal Cookies recipe combines two of my favourite things: delicious oatmeal and pumpkin biscuits! It is the perfect dessert for autumn because it has just the right amount of pumpkin flavour. You can clearly smell it, but it’s not overpowering.
And because these pumpkin ice cream biscuits are made with real pumpkin, they don’t taste as strange as some ‘pumpkin spice’ biscuits!
Ingredients :
2 1/2 cups rolled oats
2 1/3 cups flour
1 Tablespoon baking powder
1 teaspoon baking soda
2 teaspoons cinnamon
1 teaspoon ground nutmeg
1 teaspoon salt
3/4 cup sweet cream unsalted butter melted
1/3 cup pumpkin puree
1 1/2 cups sugar
1 Tablespoon molasses
1 teaspoon vanilla
