HOMEMADE CAJUN SEAFOOD BOIL .
This meditation of incredibly delicious Cajun-style seafood boil combines crawfish, bay shrimp, smoked sausage, corn on the cob, potatoes, and more! It’s a dish that’s perfect for entertaining guests, and totally fits as the centerpiece of your gathering!
Ingredients :
Cajun seafood congee
▢1 Tbsp butter
▢1 large yellow onion (or white onion, chopped)
▢8 cloves garlic (diced, sliced or smashed)
▢2 Tbsp old cove
▢2 Tbsp Cajun seasoning
▢4 whole bay leaf
▢1 large lemon (juice)
▢1 tsp each, salt and pepper (taste)
▢16 cups water
▢1 1/2 lbs Yukon Gold potatoes (yellow or white potatoes – whole, in halves or quarters)
▢4 ears sweet corn (quartered)
▢14 oz smoked sausage (one package, sliced)
▢24 oz crayfish (all)
▢24 oz bay shrimp (all)
Garlic-oil sauce
▢1/2 cup butter (1 stick unsalted)
▢1/2 large yellow onion (diced)
▢1 Tbsp garlic (minced)
▢1/2 large lemon (juice and zest)
▢1 Tbsp Cajun seasoning (taste)
Instructions :
Cajun seafood broth.
In a large saucepan, heat butter over medium heat until melted. Add chopped onion and stir-fry for 2-3 minutes or until translucent.

Add garlic, old bay seasoning, cajun seasoning, bay leaf, lemon juice, salt, pepper and water. Stir and bring to a boil over medium to high heat.
8 cloves garlic ;2 Tbsp old bay ;2 Tbsp Cajun seasoning ;4 whole bay leaf ;1 large lemon ;1 tsp each, salt and pepper ;16 cups water
When water comes to a boil, add potatoes. (leave whole, if small, half or quarter so potatoes are the same size) and simmer under cover about 10 minutes or until soft. * Reduce heat if necessary to keep from boiling over.
1 1/2 lbs Yukon Gold Potatoes.
Add corn and smoked sausage, cover and cook for another 5 minutes. Then add the crayfish and shrimp, return the lid and turn off the heat. Leave the pan alone for 5 minutes while you make the garlic and butter sauce.

Garlic & butter sauce
Bring a skillet to medium heat, add butter and melt. Add diced onion and fry for 2-3 minutes, then add garlic and continue frying for another minute.
1/2 cup oil ;1/2 large yellow onion ;1 Tbsp garlic
Add Cajun seasoning along with lemon juice and zest, then stir to blend. Serve on garnish or dip boiled seafood in lemon-garlic-oil sauce.
