- PREP TIME: 20 minutes
- COOK TIME: 1 hour 30 minutes
- YIELDS: 12 servings
Ingredients :
- Caramel Layer
- 1 cup medjool dates, soaked
3 tbsp peanut butter
1 tsp vanilla - Nougat Layer
- 1.5 cups almond flour
1.5 tbsp date caramel
4 Tbsp peanut butter - Dark Chocolate
- 1.5 cups dark chocolate chips
2-3 tsp coconut oil
How to prepare :
First, pit the dates and soak them in hot water for 10 minutes, not quite boiling, but almost. The most important thing is that the dates are very soft and blend easily. While the dates are soaking, prepare the baking dish by lining it with baking paper.
After 10 minutes, drain the water from the dates and place them in the food processor with the peanut butter and vanilla extract. Whisk for 3-5 minutes, stopping a few times to scrape the surface. A paste with a caramel-like consistency will form.
Remove the date caramel from the food processor and set aside. Then add the almond flour, 1.5 tablespoons of date caramel and the peanut butter. Whisk for a few more minutes until you have a crumbly dough that resembles a crust. You should be able to take it in your hand and press it firmly, and it should hold its shape. If not, continue kneading.
Place the dough in the prepared cake pan and press firmly with a spatula so that it sticks to the cake pan and there are no cavities around the edges.
Then pour the date caramel over the crust and smooth until evenly distributed. Top with the peanuts and lightly but firmly press the peanuts into the date caramel. The peanuts should cover the date caramel without leaving any gaps.
Place the mold with the loaf in the freezer and freeze for 60-90 minutes. It can also be left overnight.
Then melt the chocolate in the microwave or on a double grill with a little coconut oil. This will make the chocolate creamy and smooth. If using the microwave, melt the chocolate in 30-second intervals until it is almost melted. Stop and stir a couple of times between each.
Remove the tray from the freezer and peel the bare Snickers bars from the baking paper. Place on a cutting board and cut the block into equal-sized bars.
Quickly dip each bar into the chocolate and place them back on the baking paper-lined cutting board to prevent the chocolate from sticking.
Place the Snickers bars in the freezer for 20 to 30 minutes to harden completely. For aesthetics, you can sprinkle the Snickers bars with more chocolate! That’s it! Bite and enjoy. Snickers bars keep best in the freezer and can be enjoyed for up to a month!
